Featured in Alice Zaslavsky’s Salad for Days, this take on slaw includes the usual suspects (cabbage and carrots) with the addition of aromatic fennel. The veggies are served roasted with a honey-Dijon vinaigrette. Alice says the dressing’s flavor profile is a nod to a gin and tonic (courtesy of crushed juniper berries). Juniper berries have a citrusy, almost woodsy flavor. Just a little of the aromatic “berry” goes a long way. If your honey is on the thicker side, you can set the bottle in warm water for a few minutes so it easily whisks into the dressing.
